How to Bake a Cake from Scratch
With the proliferation of instant cakes on the market these days, it’s hard to remember the time when cakes had to be made from scratch. Making a cake from scratch isn’t as hard as it sounds, and it provides a wonderful opportunity to make it more your own. Here are two recipes for baking yellow cake and chocolate from scratch.

Yellow Cake
Yellow cake is a good cake for both kids and adults, and it’s flexible enough to go with either vanilla, cream cheese or lemon frosting.

Ingredients
1 cup all-purpose flour, plus extra
1/2 cup whole milk
3/4 cup whit sugar
1/4 cup shortening
2 teaspoons baking powder
1 teaspoon vanilla extract
1/2 teaspoon salt
2 whole eggs, medium

Procedure
Preheat oven to 175 degrees Celsius or 350 degrees Fahrenheit.

Get a 9×13 inch pan and grease and flour the inside section.
In a mixing bowl, mix the flour, salt and baking powder.
In another bowl, mix the wet ingredients by starting with creaming the sugar and shortening until they are light and fluffy. Add eggs one at a time, and beat thoroughly after one is added.
Add the flour mixture with the wet ingredients, alternating it with milk. Beat the mixture until just combined. Don’t overbeat it or you’ll end up with a rock-hard cake. Stir in the vanilla as a finishing touch.
Pour in the mixture in the pan. It should have at least a half-inch space left at the top.
Bake for 40 to 45 minutes, or until you can insert a toothpick in the middle of the cake and it comes out clean.

Chocolate Cake
Chocolate cake is a favorite for kids, and is also a crowd pleaser. It goes well with vanilla or chocolate frosting.

Ingredients
1 ounce unsweetened chocolate
2 cups sugar
2 cups flour
1 cup water
1/2 cup butter, softened
1/2 cup buttermilk
1 and 1/4 teaspoon baking soda
1 teaspoon vanilla
2 eggs, beaten
Procedure
Preheat the oven to 350 degrees Fahrenheit, or 175 degrees Celsius.
Use a double boiler to melt the chocolate squares with the butter until just melted.
Once melted, remove the chocolate and butter mixture and add the sugar, flour and salt. Use an eggbeater or wire whisk to mix. Mix until smooth.
Stir in the baking soda, buttermilk, eggs and vanilla. Beat until smooth.
Pour the batter in a 13×9 inch pan and bake for 25-30 minutes or until a toothpick inserted in the batter comes out clean.
