Herbed Baby Potatoes - serves 6
1 1/2 pounds small red or new potatoes, scrubbed, unpeeled and quartered
2 tbsp olive oil
2 tbsp minced fresh parsley
1 tbsp chopped fresh oregano or 1 tsp dried oregano
1/2 tsp paprika
1/2 tsp garlic powder
Fresh ground black pepper to taste
Garnish:
2 tbsp minced fresh parsley
Preheat oven to 350 F. In a 2-quart casserole, toss potatoes in oil to coat each piece. Add remaining ingredients, except parsley for garnish.
Toss to coat evenly. Bake 30-40 minutes, or until lightly browned. Garnish with parsley.
